Healthy Shrimp Tacos

This will be your new favorite for Taco Night-- It's delicious, nutritious, and filling!

Ingredients

yields 3 servings (2 tacos per person)

24 large uncooked shrimp (I use frozen red Argentinian shrimp from Trader Joe’s)

1 tbsp old bay seasoning

2 tsp pink Himalayan sea salt

2 tsp pepper

2 tsp garlic powder

1 tbsp coconut oil

6 tbsp mild or medium spicy salsa

6 tbsp pico de gallo

1 bunch of cilantro chopped

1 romaine heart

1 avocado

1 lime

crushed red pepper to taste

garlic powder to taste

onion powder to taste

nutmeg to taste


Shrimp Taco Filling

If you buy your shrimp frozen, first soak it in water to help it thaw. Once thawed, pour out the water and mix in your old bay seasoning, 2 tsp of garlic powder, 1 tsp of pink Himalayan sea salt, and 1 tsp of ground pepper. Mix it all together until the shrimp are coated evenly, pour them into your coconut oil coated, preheated pan and cook on medium heat until cooked fully through.


While shrimp is cooking, you can use your turner to chop them into smaller pieces in the pan (this makes them easier to eat when you add them to the taco). Reduce heat to low to keep warm.


Guac Topping

Scoop out one whole avocado and mash together with the juice of half a lime using a fork. Use the other half of the lime to slice into wedges to serve with your tacos. Next mix in salt, pepper, crushed red pepper, garlic powder, onion powder, and nutmeg (my secret ingredient) to taste!


Meal Prep

If you are taking this meal to work, I recommend keeping everything in separate containers and building your tacos fresh when you’re ready to eat them.


If you’re ready to indulge immediately, take 2-3 pieces of your romaine hearts (be sure to wash them if not pre-washed) for each taco and stack them. Next, add your shrimp filling and guac. Then, top it off with your pico de gallo, salsa, chopped cilantro, and fresh squeezed lime juice!


I recommend 2 tacos as a serving size, but you can adjust based on your daily calorie needs. This meal is under 350 calories! Enjoy 🌮
