Healthy Chicken Goat Cheese Burgers

I was craving a burger the other day and couldn't help but think how quickly my diet would have fallen apart if I were to order one out. It's so hard to find a low calorie burger. So, I decided to make one myself, and damn was it delicious!

Ingredients
*yields 4 burgers and 4 servings of sweet potato fries
16 oz ground chicken
1 oz crumbled goat cheese
4 cups chopped spinach
6 cloves of garlic
1 shallot
1 large tomato sliced into four thick slices
1 small container of non-fat greek yogurt
5 tbsp of balsamic vinegar
1 romaine heart
3 tbsp coconut oil
salt
pepper
2 sweet potatoes
Chicken Burgers
Put your ground chicken in a large mixing bowl. Next, mince your garlic and shallots and add to your mixing bowl. Then chop your spinach into the smallest pieces you can, and add the spinach to the bowl and mix these ingredients in with your hands. The last ingredient you should mix into the ground chicken is the goat cheese. Be careful not to over mix the goat cheese, you want the cheese crumbles to remain in crumble form.
Once your ingredients are mixed in properly, split your 16 oz of chicken into four 4 oz patties. Then, preheat your pan to medium heat and add a tbsp of coconut oil or enough to evenly coat the size of your pan. Add your burgers to your pan and cook for around 5 minutes on each side.
Creamy Balsamic
Once the burgers are done cooking, make your creamy balsamic topping. To do this simply mix a small container of non-fat greek yogurt with 5 tbsp of balsamic vinegar. I recommend mixing in a small tupperware for easy storage. Stir together until fully mixed and all one color.
Sweet Potato Fries
Slice your sweet potatoes into long strips. Depending on how crispy you want them to be you can slice them thinner or thicker. Thinner slices will make crispier fries. In a small bowl, toss your sliced sweet potatoes in coconut oil and lightly coat in salt and pepper to taste.
I typically cook mine in my air fryer at 400 degrees for around 10 minutes, tossing them every couple minutes so they don’t burn on one side. You can also bake these in the oven at 450 degrees for 15 minutes, moving them around on your own every so often to evenly bake them.
Meal Prep
To eat right away, wash your romaine heart and pull off enough to create a bun for your burger. Next, put the burger on the lettuce, spread a tbsp of your creamy balsamic on top of the burger. Slice a thick slice of tomato, put it on top, and sprinkle a little bit of salt and pepper on top. Serve with your sweet potato fries and enjoy!
To bring to work, keep all ingredients in separate containers so you can reheat your burger in the microwave and then add your condiments. I recommend reheating your sweet potato fries in a toaster over if you have one available, but if not, the microwave will do. Once heated, add your creamy balsamic, the tomato slice and top with salt and pepper and enjoy!
